Ingredients:
2 cans (5 oz each) Polar Chunk Light Tuna, drained
1/4 cup red onion, finely diced
1/4 cup pickles, finely diced
1 tablespoon chives, chopped
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon cayenne pepper (adjust to taste)
1/4 cup parsley, chopped
4 slices sourdough bread
1 cup shredded mozzarella cheese
Butter for spreading
Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the drained tuna, diced red onion, diced pickles, chopped chives, mayonnaise, Dijon mustard, cayenne pepper, and chopped parsley. Mix well until all ingredients are evenly incorporated.
Place the sourdough bread slices on a baking sheet. Spread butter on one side of each slice.
Divide the tuna mixture evenly among the bread slices, spreading it on the unbuttered side.
Sprinkle shredded mozzarella cheese over the tuna mixture on each bread slice.
Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the bread is toasted to your liking.
Once done, remove the baking sheet from the oven.
Serve the tuna melts hot, optionally garnished with extra chopped parsley on top.
