The Mackerel is delivered to the cannery. Upon delivery the mackerel is inspected and evaluated for any biological or chemical hazards. If any pollutants are found the mackerel is rejected.

After inspection all the mackerel is thoroughly washed and salted. The mackerel is then weighted and canned. The cans are sealed and put through the thermal process.The mackerel is cooked in it's own juices under pressure to ensure the product is commercially sterilized.

After the thermal process the cans are cooled in sanitized water. The cans are then dried and ready to be labeled and cased. The finished product is either shipped or stored at the warehouse for a later shipping date.
