The mussels are received at the cannery either raw or cooked. The raw mussels are boiled and shelled. All mussels are washed and graded. The mussels are then smoked.

After the smoking process the mussels are ready to be canned. All cans and lids are inspected for contamination or defects. The cans are then filled and sealed and ready for the thermal process. All canned mussels under go the thermal process, which cooks the product under pressure to ensure the product is commercially sterilized.

After the thermal process the cans are cooled in sanitized water. The cans are then dried and ready to be labeled and cased. The finished product is either shipped or stored at the warehouse for a later shipping date.
